Our Favorite Sunday

Weekends off are pretty new to me. I started a new job three weeks ago and I.LOVE.IT! I am a Promotional Production Coordinator, meaning, I design promotional products for companies (think tumblers, speakers, pens, clothing, head wear, etc.) and once a company says they like one of my designs (or a design of my co-workers) we get them sent off to be made in various vendor facilities around the country. It's so fun, and it is really cool to see my designs made and used at big companies around the country.

David's current role allows him weekends off too! That means weekends are family time. We agreed that this past Sunday was our most favorite Sunday, and maybe one of our most favorite days, since we've had as a couple. 


We began the day going to Solid Rock church (due to our previously weird retail schedules, church has not been an option, so this was a big deal). After, we went to a nearby food area and each got our pick for lunch. He had a bagel sandwich and I had a carne asada burrito. Ha! Totally unrelated but equally delicious.

After lunch we ran home, cleaned the house and went up to the road to Gramma's farm stand, where we spent the next hour picking blackberries.

9.56 pounds of blackberries.


This was a 10-qt. bucket that we nearly filled to the top!
With this new schedule and my renewed work-life balance, I decided to bake my very first cobbler! It was so easy and so delicious! Not to mention, it is a "healthy" version due to the limited ingredients and the zillion blackberries I put into it. Special thanks to my Aunt Shelly for giving me the recipe:

1 box yellow cake mix
Fruit of your choice
12 oz. Sprite or Diet Sprite

-Spray 9x13 pan with cooking spray. Preheat oven to 300.
-Layer fruit (we used our blackberries) on the bottom of the pan
-Sprinkle dry cake mix over the fruit
-Pour Sprite over the cake mix
-Cover in foil
-Bake for 20 minutes

-Remove foil
-Bake for 40 minutes
-Enjoy! I would recommend vanilla ice cream with it.
 So delicious, and like I said, it's healthy!


I didn't do a great job pouring the Sprite as you can see in my finished pictures, so you might use a little more than 12 oz. to assure there's no dry cake mix left on the top after. We just mixed it around with the berry juice at the bottom as we ate it though so it tasted fine still.


While that was cooking, David and I made 5 mason jars of homemade blackberry jam. Right?! Who are we?! That was so fun and simple since we bought the Instant Pectin from Target. I doubt we'll ever buy store-bought again.




Well, I haven't actually tried it on bread or anything yet (I probably will tomorrow) but after eating it straight out of the bowl taste-testing it, I think it turned out delicious.

Such a fun day and a great way to start our week! I'm excited to see what else we'll do this week.
